Sunny Lemon

Hello friends!

Last night I had a couple of friends over to watch a "chick flick" marathon, including A Walk to Remember, Bridesmaids, and The Notebook. I decided to try out these lemon bars from my favourite website A Beautiful Mess (www.abeautifulmess.com), and they were AMAZING. The squares were so sweet yet left a subtle bitter after-taste due to the lemon zest, and the balance of tartness was exquisite. I definitely recommend this recipe! 

For the crust: 
-1/2 cup butter (one stick)
-1/4 cup sugar 
- 1 cup flour  
- a pinch of sea salt 
Combine all ingredients until you get a crumbly texture (I would recommend using an electronic mixer), then press dough into a greased baking pan. Poke a few holes in the bottom with a fork. Bake at 350 F for 15-18 minutes. Remove from oven and allow to cool while you prepare the filling.
For the filling: 
- 3 eggs
- 1 1/2 cups sugar 
- 1 tablespoon citrus zest 
- 1/2 cup fresh squeezed citrus juice
- 1/2 cup flour and powder sugar 
Whisk together all ingredients except for the flour and powder sugar until combined, then pour into prepared baking pan with crust. Bake at 350 F for 30-35 minutes, until the bars have set. Remove them from the oven and dust with powdered sugar. 
TIPS: 1. These bars can be made with lemon, lime or grapefruit zest
        2. I would recommend letting the bars cool for at least 10 minutes before adding flour/sugar, because the particles tend to seep through the filling
